A Healthy-er Lasagna
In my quest to provide my family with tasty, hearty meals minus all the junk, I have come up with a new lasagna recipe. And who doesn’t appreciate a good lasagna?!? My version of a healthy-er lasagna is made with ground turkey and comes pasta free and resulted in second helpings for both my skeptical husband and my toddler.
Ingredients:
- 1 large zucchini (or several depending on the actual size of the zucchini)
- 1lb of ground turkey
- 1 can of your favorite pasta sauce
- 1 8oz bag of shredded italian cheese blend made with skim milk
- salt and pepper
Instructions:
- Brown your turkey meat and season with salt and pepper to taste. Set aside.
- Thinly slice the zucchini.
- Coat an 8×8 baking dish with a thin layer of your pasta sauce.
- Place the zucchini in a single layer directly on top of the sauce. (the zucchini is replacing the high carb/sugar pasta) Sneaky, huh?!?
- Top with a layer of turkey, followed by a layer of sauce, and a layer of cheese.
- Then repeat so that you have two complete layers of yumminess.
- Cover with foil and cook at 400 degrees for 20 minutes then remove foil and continue to cook for an additional 10 minutes or cheese is bubbly.
Serve with a salad and Viola!

This sounds really good, and I might just have to try it. I found a recipe on Sparkpeople that is a skillet lasagna that was a lot healthier too and it was a big hit at my house.
