A Healthy-er Lasagna

In my quest to provide my family with tasty, hearty meals minus all the junk, I have come up with a new lasagna recipe. And who doesn’t appreciate a good lasagna?!? My version of a healthy-er lasagna is made with ground turkey and comes pasta free and resulted in second helpings for both my skeptical husband and my toddler.

Ingredients:

  • 1 large zucchini (or several depending on the actual size of the zucchini)
  • 1lb of ground turkey
  • 1 can of your favorite pasta sauce
  • 1 8oz bag of shredded italian cheese blend made with skim milk
  • salt and pepper

Instructions:

  • Brown your turkey meat and season with salt and pepper to taste. Set aside.
  • Thinly slice the zucchini.
  • Coat an 8×8 baking dish with a thin layer of your pasta sauce.
  • Place the zucchini in a single layer directly on top of the sauce. (the zucchini is replacing the high carb/sugar pasta) Sneaky, huh?!?
  • Top with a layer of turkey, followed by a layer of sauce, and a layer of cheese.
  • Then repeat so that you have two complete layers of yumminess.
  • Cover with foil and cook at 400 degrees for 20 minutes then remove foil and continue to cook for an additional 10 minutes or cheese is bubbly.

    This sounds really good, and I might just have to try it. I found a recipe on Sparkpeople that is a skillet lasagna that was a lot healthier too and it was a big hit at my house.
