A ‘Special’ Chicken Salad Sandwich
Is it really a recipe if you are making a sandwich???
I love me a good sandwich, especially if someone else is making it. But I tend to get stuck in a rut of the same ‘ol-same ‘ol…turkey, cheese, tuna. BORING!
Last night we had company and while Chinese take-out got their mouths watering, mine…not so much. A sandwich! Once the thought entered my mind, there was no talking me out of it. But, it was supper-time (yes, I’m from the south, and yes, we call it supper. Breakfast. Dinner. Supper.) so it couldn’t be just your ordinary run of the mill dinner-time sandwich. It had to create something special.
Lo and behold- a ‘Special’ Chicken Salad Sandwich.
Ingredients (this is enough for two servings, which means that I have enough for dinner tomorrow)
2 slices of whole grain bread
1 can of chicken breast
1 boiled egg diced (i used only the white)
1/2 avocado
1 tomato sliced
1tbs fat-free cream cheese
1 small apple- diced
1 tbs mustard
salt & pepper to taste
Assembly
- Combine chicken, diced apple, diced egg, mustard, salt & pepper in a mixing bowl.
- While bread is toasting, mash 1/2 of an avocado until it is a creamy consistency.
- Spread a generous amount of your avocado on to one piece of toast and spread the cream cheese on to the other piece.
- Dallop half of your chicken salad onto your toast and top it off with a couple slices of tomato.
