Feta Turkey Burger
If you have yet to follow Fit Minded Mom, your missing out. Her blog is honest, and fun, and most importantly inspiring. As a matter of fact, she was the inspiration behind the feta turkey burgers my family enjoyed for supper last night. I had full intentions of following her recipe to a T, but was missing several of her ingredients (spinach) and had a couple of things in the fridge that I needed to use before they went bad (mushrooms). So with a couple of tweaks to a recipe that looked perfect, this is what I came up with.
Ingredients
1lb of lean ground turkey meat
1 egg
1/4 cup of crumbled feta cheese
Worcestershire sauce
1/2 cup of sliced white mushrooms
1/2 sliced medium onion
1 handful of breadcrumbs
Salt & pepper (I used a spice mixture my husband made for a barbeque last week that included cayenne, thyme, oregano, S&P- I think the cayenne gave it a little something special)
Extra virgin olive oil
Preparation
- Combine turkey, breadcrumbs, spices, a couple drizzles of worcheshire sauce, and egg in to a mixing bowl.
- Add feta and mix well to create four patties.
- Heat a skillet over medium heat and add olive oil.
- Cook the patties two at a time until done.
- While the patties are on the grill, heat a separate skillet over medium-high heat and drizzle with olive oil.
- Saute the onions and mushrooms for several minutes until they begin to soften and then add a couple of tablespoons of worcestershire sauce.
- Cover and continue to saute until both the mushrooms and onions are soft.
- Place turkey patty on a bun and top with mushrooms and onions or serve with a large salad.
My husband is typically not a fan of the turkey burger. To bland he says. But this one he approved of. It was DE-LISH!!
