Quick Easy Healthy: It’s Whats For Lunch

Looks good doesn’t it???

Oh, you have no idea!

This meatless meal is packed with protein and healthy fats and loaded with flavor. It has become one of my go-to meals because of the it’s ease (no ‘cooking’ required) and inexpensive ingredients.

What is it you ask?  

Egg & Avocado Salad Wrap


  • 1 hard boiled egg- diced
  • 1 avocado- diced
  • 1 handful of cherry tomatoes cut in halves
  • 2tbs of feta cheese
  • 2 small whole wheat tortillas
  • A couple of sprinkles of S&P


  1. Pop your tortillas into a microwave for about 20 seconds
  2. Layer on the egg, avocado, tomatoes, and feta
  3. Sprinkle with s&p
  4. Eat Up!

    I’ve made this recipe several times since you gave it to me a few weeks ago and I love it! It’s the only way Dax will eat eggs.
