In Honor of Fall…
Ooh! Fall…my absolute favorite time of year. Cozy sweaters and tall boots, the smell of cinnaman candles, Friday night lights, Starbuck’s caramel apple spice, and the first fire of the year (we don’t wait for winter, the very moment the temperature drops below 75 my husband has our fireplace a ‘roarin’). What is there not to love about this time of year…besides fantasy football ( I want my husband back!).
In honor of the most magnificent of all seasons…I give you a big ‘ol pot of soup and some caramel apples.
Chicken Tortilla Soup (Our Fave)
Ingredients
- 2 chicken breasts
- 1 bell pepper
- 1 can of beans (I like to use the ones with jalapenos)
- 4 medium red potatos
- 1 28oz can of diced tomatoes
- 1 quart of chicken broth
- 1tsp of tobasco sauce
- S&P
- EVOO
Preparatrion
- cut your chicken breasts into 1in cubes
- dice you bell pepper and potatoes
- drizzle evoo into your soup pot over med-hi heat
- add chicken, season with s&p and brown, about 3 minutes
- add the peppers and potatoes and continue to cook until vegetables begin to soften (careful not to over cook the chicken)
- add in the quart of chicken stock, can of tomatoes, and tobasco and bring to a boil
- reduce heat and cover, continue to cook for about 15 more minutes
- sprinkle with cheese and Mmm! Mmm! Mmm!
And now DESSERT!!
A Good For You Caramel Apple
- mix 1 packet of Splenda and 1 tsp of sugar free caramel syrup into 1 single serving of plain Greek yogurt
- slice an apple for dipping and enjoy!
This tastes just like your traditional caramel apple, but its guilt-free!
